Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cloves garlic
1 dash olive oil
3 1/2 ounces fresh leafy greens
2 tomatoes -- chunked
14 ounces canned chickpeas -- rinsed and drained
1 teaspoon mint sauce
salt and coarse black pepper
Saute the garlic in a little oil, and tip in the greens, stirring well.
After a couple of minutes, add the tomatoes, chickpeas, and mint sauce,
and allow to cook through for a few minutes more, then season to taste.
Tip into a bowl, and enjoy with flatbread; creamy yogurt is an optional
but desirable extra. And you've still got half an hour of your lunch break
left...

AuthorNote: The five-minute lunch or dinner. It is based on an Iraqi lamb
stew: I have literally stripped it of the meat element. You can find mint
sauce in European delis and some supermarkets.
