Splendid Table West Indies Spice Blend

1 1/2 teaspoons whole allspice -- or 2 teaspoons ground
1 1/2 teaspoons ground ginger
1 teaspoon whole coriander seed -- ground, or 1 teaspoon ground
1 cinnamon stick -- 1-inch long, broken, or 1 generous teaspoon ground
1 tablespoon sweet paprika
1 tablespoon dried basil -- generous
1/2 teaspoon dried thyme
Mix all of the ingredients in a jar with a tight-fitting lid and keep in a cool, dark place.
Makes about 1/3 cup (15 one-teaspoon servings)

Keeps in a cool, dark place 3 to 4 months
AuthorNote: Africa's Berber spice meets the jerk seasonings of Jamaica, but without the chiles (you can add them if you wish). Use this blend with yams, tomatoes, greens, and beans. It's a BBQ rub, and with salt, a dry brine. Grinding whole spices with a coffee grinder or mortar and pestle gives you bolder flavors, but ground spices can be used, too.
