Paraguayan Vegetarian Turnovers - Empanadas

1 pound frozen shortcrust pastry -- or puff pastry, thawed
1 onion -- sliced
1 green bell pepper -- chopped
2 garlic cloves -- sliced
2 hard boiled eggs -- to 3 eggs, chopped
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1 tablespoon parsley -- chopped
1 tablespoon oil -- to 2 tablespoons, or as needed
salt and freshly ground black pepper -- to taste

Saute the onion in hot oil and, when it is soft, add the bell pepper and then the garlic. Cook for a couple of minutes and then add the eggs, chili, cumin, parsley and seasoning. Mix well.

Roll out the pastry, and then cut into rounds using a saucer.

Spoon some of the mix onto one side of the dough and fold the other side over, pressing down the edges with a fork. Prick with a fork to let air escape.

Place on a baking sheet, and cook for 10 to 20 minutes until golden brown. Serve hot with chutney or salsa and a salad.

They are stuffed pastries or turnovers, and can be made with many different ingredients, including hard-boiled egg with cheese and chili powder. You can also try a mix using crushed sweetcorn or red kidney beans.
