             Paramount Chat Masala -  Indian Spice Mix Blend

  1           teaspoon  black peppercorns
  1           teaspoon  cumiin seeds
     1/2      teaspoon  ajwan seeds -- tiny seeds smell like cumin, taste like thyme with a licorice overtones
  3                     cubebs -- also called West African peppercorns, native to Java
     1/2      teaspoon  dried pomegranate seeds
                        seeds from 3 green cardamom pods
  1           teaspoon  ground black salt -- used in Northern Indian cooking; contains no sodium
  1           teaspoon  amchoor powder -- made from sun-dried mangoes
  1           teaspoon  ground ginger
     1/4      teaspoon  asafoetida powder -- made from the resi sap of a large fennel-like plant
  1           teaspoon  ground red pepper

Grind the whole spice to a fine powder and then stir in the remaining
spices.
Store in a sealed jar.

Makes about 2 1/2 Tablespooons (about 7 one-teaspoon servings)

"Chat" is an Indian term for appetizers, palate teasers, or small morsels
eaten as a snack. This spice mix is used to flavor fried pastries, various
potato preparations and tomato-based salads
The raw spiciness and tart flavor of the mix best suit fruit or vegetables
- I find it works wonders when added to cooked root vegetables,
accentuating their rich earthy flavor.

ChupaNote: ajwn seeds, cubebs, black salt, amchoor powder, & asafoetida
powder can be found in Indian markets or online.
