                      Orange Date and Cardamom Tart

  4              large  eggs
     3/4           cup  superfine sugar -- (caster)
                        grated rind of 2 oranges
     1/2           cup  freshly squeezed orange juice
  4                     green cardamom pods -- seeds only, ground
     2/3           cup  light cream -- (35%)
  18                    fresh dates -- halved and pitted
  1                     tart shell -- or sweet pastry dough

Whisk the eggs and sugar until pale and creamy. Stir in the grated orange
rind, orange juice, ground cardamom and cream, then refrigerate overnight.

Line a 10-inch flan tin and blind bake (320F until crisp and pale golden
about 12 to 18 mins) or use a prepared tart shell.

Strain the egg mixture through a fine-meshed sieve and discard the solids.

Preheat the oven to 320F.

Place the cooked tart shell on a baking tray, then arrange teh halved
dates over the base of the tart and gently pour in teh egg mixture. Bake
for 30 minutes or until the cusard has set. 
Remove the cooked tart from the oven and allow to cool for 3 hours before
removing it from its tin. Slice the tart into wedges to serve.

Makes one 10-inch tart (serves 10)

AuthorNote: This dessert, with its Middle Eastern flavors, first appeared
in "Paramount Desserts", but begs for a place in this chapter because of
its obvious spice content. Oranges and cardamom are natural and easy
partners in the flavor spectrum, which is why they are often combined in
sweet confections. You could substitute tangelos, blood oranges, mandarin
oranges or clementines for the oranges.
