[MC-AllEthnic-Recipes] Windy City Vegan Basic Sofrito - 5 pts plus; 40g Carbohydrate; 10g Dietary Fiber

 

I don't know how the carbs came out so high, (given the ingredients!) but it is for the whole recipe.

Process all the ingredients until pureed. Stores for up to a month when refrigerated.ChupaNote: store in a wide-top glass jar. Cover the surface with a thin film of olive oil, to prevent discoloration. Add at least 1 teaspoon ground red pepper.
