Garlic Mediterranean Salsa

Amount Measure Ingredient -- Preparation Method

6 Cloves Garlic -- minced
6 ounces Feta Cheese -- (1 package)
1 Roma Tomato -- chopped
2 Green Onions -- finely chopped
4 Tablespoons Red Bell Pepper -- finely chopped
2 Tablespoons Black Olives -- chopped (use green if desired)
1 Tablespoon Pimentos -- finely chopped
2 Tablespoons Italian Parsley -- chopped
4 Tablespoons Olive Oil

Mix all ingredients together and chill.
Best served on bagel chips, toasted baguette slices or party breads.

Serves 6

Notes: If served in a party setting the main requirement for this dish is
that everyone eats some !

I was given the original recipe from my good friends the Zakopyko's from
Stanwood WA. Over the years I have tweaked it to
where it is today. Every year in June our home town has a Garlic Festival
and I was honored to be in the Northwest Garlic Festival
Cookbook Silver Anniversary Edition.
