Egyptian White Chickpeas with Lime Juice

3 cups dried white chickpeas -- picked over, soaked in cold water to cover overnight, and drained (use the roasted ones if you can find them)
1 cup Finely chopped fresh flat-leaf parsley -- leaves only, from 1 or 2 bunches
1/2 cup finely chopped scallions
6 tablespoons extra-virgin olive oil
3 tablespoons fresh lime juice
salt -- to taste

Place the chickpeas in a large saucepan and cover with several inches of
cold water. Bring to a boil until tender, 2 to 3 hours. Taste the
chickpeas to see whether they are done. Drain well and, when cool enough
to handle, bur off as much of the white skin of the chickpeas as you can.

Place the chickpeas in a large bowl and toss with the parsley and
scallions. In a small bowl, whisk together the olive oil, lime juice, and
salt until it thickens. Pour over the chickpeas and toss gently to coat,
then serve.

AuthorNote: White chickpeas that have been roasted and dried are popular
in Turkey as well as Egypt. In Turkish, they are known as 'leblebi'.
Roasted and dried white chickpeas are best found in Middle Eastern
markets; the label will read "Beyaz Leblebi". In Egypt, many different
salads are served as meze and this chickpea salad is delightful tossed
with lime juice instead of the more common lemon juice one finds in the
Levant. You can use canned chickpeas in this recipe, but you will miss out
on the nutty taste of roasted white chickpeas.
