Feta Flan with Beef Bacon - Egyptian

4 slices beef bacon -- trimmed and chopped
2 onions -- chopped
1 large carrot -- grated
1 tablespoon oil
5 sheets filo pastry
1/4 cup butter -- melted
7/8 cup Feta cheese -- crumbled (4 3/8 oz)
3 eggs
1 1/4 cups milk
1/2 cup grated Parmesan cheese

Sauté beef bacon, onions and carrot in oil until onion is soft and beef
bacon crispy (about 2-3 minutes).

Fold filo pastry sheets in half to make 5 double layers. Place a double
layer in a greased 23 cm flan dish, allowing corners to protrude. Brush
with melted butter. Place second layer across first staggering the corners
to form 8 points around dish. Brush with butter. Repeat this procedure
until all sheets are used to form the flan shell.

Spread the cooked mixture over shell and sprinkle feta cheese on together
and pour gently over filling. Sprinkle with cheese. Bake at 180ºC (Gas 4)
for 40-45 minutes or until firm and set when tested.

Serve hot or warm with a crisp green salad and fresh crusty bread.

Makes 1 eight-inch flan (Serves 4 to 6)
