Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cups spelt -- farro, or wheat berries
8 ounces sliced white button mushrooms
1/2 cup finely chopped shallots
6 cups vegetarian 'beef'-flavored broth
salt and freshly ground black pepper -- to taste
1/2 cup heavy cream
1/2 cup freshly grated Parmigiano-Reggiano cheese

Combine the spelt, mushrooms, shallots, broth, and salt and pepper to
taste in a large slow cooker. Cover and cook on high for 2 hours, or until
the spelt is tender and the liquid is absorbed.

Uncover and stir in the cream and Parmesan. Taste for seasoning. Serve
hot.

Serve 8 to 10

ChupaNote: gently warm the cream so it doesn't chill down the pilaf. I
used wheat berries and portobellos.
