Slow Cooker Lemon Pots de Creme

1/3 cup fresh lemon juice
1/2 teaspoon grated lemon zest
1/2 cup sugar
4 large egg yolks
1 cup heavy cream

Stir together the lemon juice, zest, and sugar until the sugar is
dissolved.

In a large bowl, whisk the egg yolks and cream until blended. Stir in the
lemon juice mixture.

Scrape the mixture into four 1/2-cup custard cups or ramekins. Place a
rack in the insert of a large slow cooker. Carefully place the cups on the
rack. Pour about 1-inch of hot water into the cooker. Cover and cook on
high for 2 hours, or until the creams are softly set and slightly jiggly
in the center. Uncover and let stand for 10 minutes. Carefully remove th
cups from the cooker.

Cover and refrigerate until chilled, 2 hour, or up to 3 days, before
serving.

AuthorNote: Smooth and delicate, these silky lemon custards are especially
good after a [cFavorite] dinner.

Adding hot water to the slow cooker helps to distribute the heat to ensure
the puddings cook evenly. Just be careful not to splash the water into the
cups, and be sure to protect your hands with rubber glove when you remove
the cups from the cooker so that you don't burn your fingertips.

Too delicate to be unmolded, these creams are served in the cups in which
they are cooked, perhaps with a crisp butter or almond cookie on the side.
