Slow Cooker Classic French Chicken Broth

3 pounds chicken wings -- backs, giblet or other parts
3 medium carrots -- coarsely chopped
1 large onion -- stuck with a clove
2 celery ribs -- coarsely chopped
1 leek -- trimmed, well washed, and coarsely chopped
2 sprigs fresh flat leaf parsley
1 garlic clove -- peeled
1 bay leaf
1 teaspoon whole peppercorns
10 cups water

Combine all the ingredients in a large slow cooker. Cover and cook on low
for 8 to 10 hours.

Let cool slightly. Strain the broth into a bowl and discard the solids.
Refrigerate until cold. Remove the fat from the surface.

Use within 3 days or freeze in small containers for up to 6 months.

Makes about 2 1/2 quarts (makes 10 one-cup servings)

AuthorNote: This French-style broth is easy and economical, especially if
you use trimmings like wing tips and backs and the giblets found inside
whole birds. Do not use the livers, however, since their flavor is too
strong. Turkey parts, if you have some, are good too, and add extra
flavor.
