Slow Cooker Beans a la Francaise

1 pound flageolet -- cannellini, Great Northern, or other beans, rinsed and picked over
1 large carrot -- peeled and halved
1 celery rib -- halved
1 medium onion -- peeled
1 garlic clove -- peeled
2 sprigs fresh flat leaf parsley
2 teaspoons salt

Place the beans in a large bowl with cold water to cover by several
inches. Soak in a cool place for 6 hours or overnight. drain the beans.

Place the beans in a large slow cooker. Add the vegetables, garlic,
parsley, and salt. Add fresh water to cover by 1-inch.

Cover and cook on high for 4 to 6 hours, or until completely tender.
(Taste a few beans to be sure.) Discard the vegetables. Serve the beans
hot as a side dish or use them in salads, soups, or stews.

Makes 6 one-cup servings.

AuthorNote: Pale green flageolets are a favorite French bean variety, as
are small, round white beans and the large, flat Tarbais beans, but any
kind of beans, including Great Northern, cannellini, kidney, pea beans, or
chickpeas, can be cooked this way.

These beans are a good side dish sprinkled with freshly ground pepper and
drizzled with extra-virgin olive oil or tossed with some butter.
