Arame Garlic Rice

1/2 cup arame -- soaked in 1 1/2 cups water
2 cups white basmati rice
3 cups water -- or stock
1 teaspoon salt -- or to taste
8 garlic cloves -- to 10
2 Tablespoons mirin
Place the arame and hot water in a small bowl and allow to sit or 10
minutes.
Drain well and place in a medium pot with the remaining ingredients over
medium-high heat.
Bring to a boil, cover, lower the heat to low, and simmer until all of hte
liquid is absorbed, approximately 10 minutes. Allow to sit for 5 minutes
before gently mixing well.
Serves 6
VARIAITONS:
Try replacing the arame with hijiki and roast for an additional 10 minutes
before using.
Add 1 cup of chopped onion or veggies such as celery, shallots, bell
peppers, or mushrooms.
If you have more time, replace the basmati rice with brown rice or another
grain and cook according to the instrutions.
