Spicy Garlic Beef

1 pound sirloin -- or flank steak, cut into thin slices , or use chicken, pork or tofu
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons sesame oil -- or peanut oil
2 garlic cloves -- peeled and finely minced
1 piece fresh ginger -- (one-inch) peeled and finely minced
2 tablespoons finely chopped scallions
1 teaspoon Sriracha sauce -- or more to taste
1/2 cup rice wine vinegar
2 tablespoons sugar
1/2 cup unsweetened coconut milk

Pat the meat dry and sprinkle with the salt and pepper. In a large skillet, heat the oil over medium-high heat, being careful not to let it smoke. Add the beef and brown on both sides, about 2 minutes. Reduce the heat to medium and add the garlic, ginger, scallions, sriracha, vinegar, and sugar. Stir on occasion and let simmer for about 15 minutes. All of the liquid will cook off and the meat will be nicely caramelized.

Reduce the heat to low, add the coconut milk, and continue to cook until it is thickened, about 5 minutes.

Makes enough to top two 12-inch pizzas (approx. 2 cups)

Some like it hot - we do! - but feel free to tone down the spices. This recipe is excellent mild too, and either way, the fresh cilantro and lime provide a great contrast. Swap in chicken, pork, or tofu if that tickles your fancy.

The easiest way to cut meat thin, as we require for the beef in this recipe, about 1/16 inch thick, is to freeze it for 10 minutes - just long enough to make the outer layer of the meat is stiff enough to slice evenly.
