1/2 cup black pepper
1/4 cup cayenne pepper
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons grated nutmeg
Combine all the spices in a small bowl and mix well. Store in a jar with a tight-fitting lid for up to 1 year.
Makes about 1 cup (16 one-tablespoon servings).
AuthorNote: Ground ginger and cayenne pepper distinguish this spice mix from those used in the cooking of the Eastern Mediterranean. but the mixtures vary not only from country to country, but from household to household. That's why I encourage you to tinker with the combination of spices listed here until you come up with a mix that suits your palate.
