Egyptian Traditional Hot Sauce - Ta'Liya

1 tablespoon corn oil
1 yellow onion -- diced
5 garlic cloves -- minced
2 cups tomato puree
salt and pepper -- to taste
1 teaspoon ground cumin
1/4 teaspoon chili powder
1 tablespoon distilled white vinegar

Heat 1 tablespoon corn oil in a medium saucepan over medium heat. Add
diced yellow onion and saute until soft and golden. Add garlic and saute
until it begins to color. Add tomato puree, stir, and season with salt and
pepper to taste. Add cumin and chili powder and stir well; cover and
simmer for 20 minutes. Add vinegar and simmer, covered, for an additional
5 minutes. Taste and adjust salt and pepper, if necessary. Remove from
heat and keep covered until serving.

Makes 2 cups (16 one-tablespoon servings).
