                   Modern Mexican Style Chocolate Sauce

  4             ounces  dark chocolate -- chopped
     3/4           cup  heavy cream
  4          teaspoons  granulated sugar
  1           teaspoon  instant espresso powder
     1/2      teaspoon  ground cinnamon
  1           teaspoon  pure vanilla extract
     1/2      teaspoon  pure almond extract
  1              pinch  ground chipotle chili powder -- or other good chile powder
  1              pinch  kosher salt

Put the chocolate in a medium stainless-steel or other heatproof bowl.

In a small, heavy saucepan, bring the cream just to a simmer over medium
heat. Remove from the heat and stir in the sugar, espresso powder,
cinnamon, vanilla, and almond extract, ground chipotle, and salt. Pour the
cream mixture over the chocolate. Leave undisturbed for about 1 minute to
melt the chocolate, then start whisking in small circles in the center of
the bowl, widening your whisking toward the outer edges of the bowl as the
sauce becomes glossy and smooth. If the sauce seems a little thick, whisk
in a few teaspoonfuls of very hot water to loosen it up. Serve warm.

Makes about 1 1/4 cups

Storage: refrigerate in an airtight container for up to 1 month or freeze
for up to 3 months. If making the sauce ahead, very gently reheat it in a
saucepan to loosen it up, adding 2 to 3 teaspoons very hot water if needed
to thin it out.

Quick Change: add 1 Tablespoon Kahlua or other coffee liqueur to the cream
as you heat it.
