[MC-AllEthnic-Recipes] Sweet Saffron Pilaf - Zarda

 

I am fixing this for dinner tonight - A TNT recipe I've been making for
years, and a family favorite.

Sweet Saffron Pilaf - Zarda

Amount Measure Ingredient -- Preparation Method

2 C Basmati rice
1 tsp saffron threads
10 whole cloves
8 green cardamom pods
1 stick cinnamon (3")
1/4 cup golden seedless raisins
1/4 cup sugar
1/4 teaspoon Kosher salt

Best done in a steamer, but just add the spices to the cooking water
otherwise.

Soften the saffron for fifteen minutes or so in 1/4 C warm water before
starting to cook.

Combine all ingredients in the steamer bowl or in a saucepan with a
tight-fitting lid.
Cook as for plain rice.

NOTES : Jasmine rice works well in this dish, but is stickier.
