Couscous with Almonds and Dried Cherries

1 tablespoon olive oil
1/2 cup chopped red onion
3/4 cup reduced sodium vegetable broth
3/4 cup water
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
3/4 cup whole wheat couscous
1/4 cup dried unsweetened cherries
2 tablespoons slivered almonds
2 tablespoons unsalted pepitas -- raw pumpkin seeds

In a medium saucepan, heat the oil over medium heat. Add the red onion and
cook for 3 to 4 minutes, stirring often until tender.

Meanwhile, in a small saucepan, bring the broth and water to a boil.

Stir the cinnamon, alt, and pepper into the onion, then stir in the
couscous and dried cherries. Pour in the boiling broth mixture and return
to a boil.

Remove the couscous from the heat, cover, and let stand for 10 minutes, or
until tender and the water has been absorbed.

Meanwhile, cook the almonds in a small skillet over medium heat for 4
minutes, tossing often, until toasted. Tip onto a plate to stop the
cooking.

Fluff the couscous with a fork. Sprinkle with the toasted almonds and
pepitas and serve.

Makes 4 servings (4 cups)
