         Minced Chicken w/ Mushrooms, Soy & Lime - Everyday Easy

  2                     boneless skinless chicken breast halves -- coarsely chopped; ab
  1         tablespoon  olive oil
  1                     onion -- finely chopped
  1              clove  garlic -- minced
  1                     red jalapeno pepper -- seeded & finely chop
  12            ounces  mushrooms -- finely chopped; oyst
  3        tablespoons  soy sauce
  2                     limes -- juice of
  1            handful  cilantro -- finely chopped
  1            handful  basil -- finely chopped
                        salt and pepper
                        hot cooked rice -- to serve

Pulse the chicken in a food processor until finely chopped. Set aside.

Heat the oil in a large skillet over medium heat. Add the onion & a pinch of salt, & cook for 5 minutes until soft. Stir in the garlic & chili, & cook for a few seconds more.

Add the chicken to the pan, season well with S&P, & cook, stirring occasionally, for a few minutes until the chicken is no longer pink. Stir in the mushrooms, & cook for about 5 minutes more.

Stir in the soy sauce & lime juice, & cook for 2 minutes. Taste & season again if needed. Just before serving, stir in cilantro & basil. Serve immediately with the hot rice, either on the side or mixed together.
