Hibiscus Granita

2 1/2 cups water
3 Red Zinger tea bags
2 tablespoons fresh lemon juice -- to 3 tablespoons
2 tablespoons honey -- to 3 tablespoons

Bring the water to a boil and remove the pan from the heat. Add the Red
Zinger and let steep for 5 minutes. Remove the tea bags and stir in the
lemon juice and honey, to taste.

Place the bowl in the freezer and freeze the granita. breaking it up 2 or
3 times with a fork as it freezes. The freezing process will take 1 to 2
hours. Just before serving, scrape it again into icy crystals with a fork.
Serve in chilled wine glasses.

Serves 4.

Granitas are the simplest of all frozen desserts made by scraping a frozen
liquid into icy crystals that melt on your tongue like snowflakes.
Hibiscus flowers bloom wild all over Florida. We have several plants in
our yard. Hibiscus flowers are the principal flavoring in Red Zinger tea,
which inspired the following recipe.

ChupaNote: Hibiscus tea bags can also be found in Mexican/Latin markets
and Middle Eastern markets also. Use a metal bowl or baking pan to freeze
the granita.
