Yemeni Spice Mix - Baharat Yemeni

1/4 cup black peppercorns
2 tablespoons caraway seeds
2 teaspoons saffron seeds
2 teaspoons cardamom seeds
4 teaspoons ground turmeric -- (1 tablespoon plus 1 teaspoon)

Combine the peppercorns, caraway seeds, saffron, and cardamom seeds in a spice grinder and grind to a fine powder. Transfer the powder to a glass jar, add the turmeric, and stir to mix it in thoroughly. Seal tightly and store in the pantry for up to 1 year.

Makes 1/2 cup (8 one-tablespoon servings).

AuthorNote: The gold-flecked spice mix can be used in place of the Saudi Spice Mix in Kabsa, the festive rice and lamb dish so popular in Arabia, to make it Yemeni.
