Arab Almond Cookies - Kaak Luz

3 cups whole almonds -- (about 1 pound) peeled and finely ground in a food processor
2 cups powdered sugar
2 cups dried unsweetened coconut
1 teaspoon grated lemon zest -- or orange zest
4 egg whites

Preheat the oven to 375F, with a rack in the upper third of the oven. Line
a baking sheet with parchment or a baking mat.

Stir the ground almonds, powdered sugar, coconut, and lemon zest together
in a large bowl.

Beat the egg whites with an electric mixer on high speed until stiff peaks
form. Using a rubber spatula, gently fold the egg whites into the almond
mixture until the whites are combined. Drop the mixture by teaspoonfuls
(for 9 dozen bite-sized cookies) or tablespoonfuls (for 3 dozen
half-dollar size cookies) onto the prepared baking sheet, leaving about 1
inch between them.

Bake until golden brown, 8 minutes for bite-size cookies and 10 minutes
for half-dollar size cookies. Leave the cookies on the baking sheet to
cool; then transfer them to a serving platter.

Repeat, baking one sheet of cookies at a time.

Makes 9 dozen bite-size cookies, or 3 dozen half-dozen size cookies.

AuthorNote: This is the first cookie I learned to make as a newlywed. They
were my contribution to an elaborate celebratory spread my mother prepared
for guests who came to congratulate Aref and me after our wedding. I chose
Kaak Luz because they are essentially foolproof and are as appropriate on
a formal dessert table as they are with a casual cup of coffee. You can
vary the kind of nut you use; Lebanese cooks use pine nuts rather than
almonds.

Bake these one cookie sheet at a time; if you bake two sheets at a time,
the cookies on the lower rack will bake unevenly. Do not use oil to
prepare the pan, or the bottoms of the cookies will bake faster than the
top. The cookies can be refrigerated in a rigid container, with wax paper
between layers, for up to 1 month. Bring hem to room temperature before
serving.
