                        Mushroom Stifatho - Greek

  2        Tablespoons  butter -- or sunflower oil (but butter is better here)
  18            ounces  baby onions -- (1 pound + 2 ounces) or shallots (the smaller the better), peeled
  1                     red bell pepper -- finely diced
  18            ounces  button mushrooms -- (1 pound + 2 ounces) wiped
  4                     cinnamon sticks -- to 5 sticks
     1/2      teaspoon  coarse black pepper
  1         Tablespoon  tomato paste
  1           teaspoon  sugar
  2                     bay leaves
  5        Tablespoons  red wine vinegar
     2/3           cup  red wine
                        salt -- to taste

Melt the butter in the bottom of saucepan, and toss in the peeled onions.
Cook on high for about 5 minutes, or until they are starting to brown a
little. Add the peppers and mushrooms, and continue to fry for another 5
minutes, then add the cinnamon, pepper, tomato paste, sugar, and bay
leaves. Stir in the vinegar and the wine, bring to a boil, and then cover
the pan and set it to simmer. The cooking liquid should be about level
with the top of the veggies - if it looks a little low, top up with water.

Cook for about 1 hour, stirring occasionally, then season to taste. 

Serve with rice. Although I actually eat it on its own, or with a little
dunky bread if I am feeling really hungry.

AuthorNote: Stifatho is basically a Greek stew, infused with half a ton of
cinnamon, made piquant by the addition of vinegar, and awash with wine.
Heady stuff. It is most traditionally made with beef or hare, but this
version sees it prepared with button mushrooms - much nicer.
