Nepalese Lentil Curry - Dal Bhat

1 onion -- sliced
3 dried red chiles -- left whole
1 cup red lentils
3 cups broth -- stock, bouillon or water
2 teaspoons turmeric
1 piece fresh ginger -- 1-inch long
2 garlic cloves -- to 4 cloves, chopped
1 tablespoon oil -- to 2 tablespoons, or as needed
salt

In a saucepan, heat the oil and then fry the onions for a few minutes. Add the chilies and continue to cook gently until they begin to brown.

Put the lentils in and pour on the liquid, adding turmeric. Bring to the boil and then simmer, covered, for about 10 minutes until the mixture thickens.

Add the ginger and garlic, stir, and cook for 5 minutes before serving with rice.

Serves 4
