Whisky Stroganoff

12 ounces steak -- (12 ounce) (or good rump)

8 ounce mushrooms -- sliced

4 ounce butter

2 tablespoons whiskey

1 large onion -- finely sliced

5 fluid ounce double cream

Salt and pepper

Cut the steak into 1/2 inch slices and pound with a mallet or rolling pin
until very thin. Cut into strips about 1 inch in length. Melt half the
butter in a frying pan and fry the onions gently until just browned. Add the
mushrooms and cook for a further 2 minutes. Remove the onions and mushrooms
from the pan and set aside. Add the remaining butter to the pan, heat well
and quickly fry the steak strips until brown. Return the onions and
mushrooms to the pan, add the whisky and cream and season to taste. Stir
well to incorporate the pan juices and re-heat gently until thoroughly
heated through, but do not allow to boil. Serve with plain boiled rice or
noodles.
