Strawberry Sauce
Amount Measure Ingredient -- Preparation Method

2 pounds strawberries
1/2 cup sugar
1/2 cup water
1/2 teaspoon vanilla
Stem and wash the strawberries. Cut into halves or bite size pieces into a
bowl; sprinkle with sugar, cover, and allow to stand for 30 minutes.
After standing, process the berries and their liquid in a blender or food
processor; strain through a sieve or cheesecloth.
Combine strained puree and vanilla in a saucepan. bring just to a simmer
over medium low heat. Cover and allow to stand for about 20 minutes to
develop flavour.
Use as an ice cream topping, a pancake/waffle syrup, or for dessert crepes.
