Manchego Cheese Butter

8 tablespoons unsalted butter -- (1 stick), at room temperature
1/2 cup grated Manchego cheese
2 tablespoons minced fresh Italian parsley -- flat-leaf
2 drops lemon juice -- or to taste
freshly ground black pepper -- to taste
Cream the butter in a mixing bowl, using a whisk. When light and fluffy,
whisk in all of the remaining ingredients. Spoon the butter into a ramekin
or pretty serving bowl and make a decorative pattern on top. Cover and
refrigerate.
Serve the Manchego cheese butter on bread and rolls.
Makes 1/2 cup (8 one-tablespoon servings)
AuthorNote: Manchego is a firm, full-flavored Spanish sheep's milk cheese
made on the plains of La Mancha. Sold at Cuban markets throughout south
Florida, it can be found elsewhere in the country at Hispanic markets and
gourmet shops. Romano cheese from Italy makes a tasty, if not strictly
identical, substitute.
