I used a smoked turkey drumstick instead of ham hocks. And used 4 cups of vegetable stock and 4 cups of water, instead of all water.

Slow Cooker Cabbage and Bean Soup - French Garbure

1 pound white beans -- such as navy or cannellini beans
1 1/4 pounds smoked ham hocks
4 medium carrots -- peeled and chopped
3 medium boiling potatoes -- such as Yukon Gold, peeled and chopped
5 cups shredded napa cabbage -- or savoy cabbage, about half of a large head
4 garlic cloves -- minced
1 large onion -- chopped
1 teaspoon chopped fresh thyme
1 bay leaf
8 cups water
salt and freshly ground black pepper

Soak the beans in cold water to cover overnight or quick-soak them. Drain
well.

Place the beans in a large slow cooker. Add the ham hocks, carrots,
potatoes, cabbage, garlic, onion, herbs, water, and salt and pepper to
taste. Cover and cook on low for 8 to 10 hours, or until the beans and the
meat are tender.

Remove the ham hocks and cut the meat into 1/2-inch pieces. Stir the meat
into the soup. Taste for seasoning. Discard the bay leaf and serve hot.

AuthorNote: Popular in several regions of southwestern France, garbure is
a vegetable soup or stew - how thick depends on how much liquid you add to
the pot. Some French cooks say it should be thick enough that a spoon can
stand upright in it.

Everyone make garbure his or her own way, and since it is eaten
year-round, the vegetables vary with the season. As for the meats, some
cooks use duck or goose confit, while others use
pork, ham, and sausage. The only ingredients that seem to remain constant
are the white beans and cabbage. Nappa and savoy cabbages are milder than
regular green cabbage.

ChupaNote: I used smoked turkey leg instead of ham hocks, and added ground
Aleppo red pepper, and Himalayan pink salt.
